Hello and welcome! My name is Dakota Rosales. I’m a 24 year old culinary school dropout and better off for it. This is both my creative miscellany and space for me to share my development/findings in the world. Thanks for checking me out!

After returning to Corpus Christi during the COVID pandemic and facing challenges in my freshman year at the University of Houston, I needed fast money. So, I decided to peel shrimp for hours, wearing new shoes I had just bought at Walmart. I didn’t realize it then, but this experience shared with new friends deepened my love for food and appreciation for the people involved in it. Now, after completing five semesters and gaining travel worthy lessons—highlighted by a few days observing the flow at MARCH in Houston, and my continued relationship with Chef Enrique Lozano from El Paso—I look forward to discovering more weird minds and curious palates as I travel across the western United States.
